Cook the chicken
Cut the chicken into 1-inch cubes and toss with 1/2 teaspoon cornstarch and a pinch of salt and pepper. Heat 2 teaspoons oil in a large skillet over medium-high until shimmering. Add the chicken in a single layer and cook through, 4-6 minutes. Remove to a plate.
