Instructions
  1. 1

    Boil the pasta

Get a pot of salted water boiling and cook the pasta to al dente per the package directions. Bowtie works well here. Scoop out a little pasta water before you drain.

  1. 2

    Cook the garlic

While the pasta cooks, melt the butter in a skillet over medium-high heat. Add the minced garlic and cook 30 to 60 seconds, just until fragrant. Don't let it brown.

  2. 3

    Build the sauce

Add the softened Boursin, chicken broth, cream, lemon juice, chopped parsley, onion powder, and Italian seasoning. Stir until smooth. When it just starts to boil, drop the heat and simmer steadily for 5 minutes.

  3. 4

    Add chicken and spinach

Stir in the shredded chicken and spinach. Cook a couple of minutes until the chicken is heated through and the spinach wilts. The sauce thickens as it cools, so don't reduce it too far. If it gets too thick, loosen it with a splash of the reserved pasta water.

  4. 5

    Toss and serve

Drain the pasta, add it to the skillet, and toss to coat. Season with salt and pepper. Serve with grated parmesan if you want it.
