Prep everything
Peel and devein the shrimp if needed. Slice the sausage into rounds, slice the zucchini and yellow squash, trim and chop the asparagus into 2-inch pieces, and chop the bell peppers. Do this all up front so the cooking goes fast.

Toss the shrimp, sausage, and all the vegetables in a large bowl with the olive oil, Cajun seasoning, and a pinch of salt and pepper until everything is coated.

Heat a large skillet over medium-high. Add the whole mixture and cook, stirring, for 5 to 7 minutes until the shrimp turn pink and opaque and the vegetables are crisp-tender. Don't walk away — shrimp overcook fast.

Pull it off the heat the second the shrimp are done. Garnish with fresh parsley if you've got it and serve right away, on its own or over rice or quinoa.
