Cook the pasta, sear the shrimp
Boil the penne to al dente per the package. While it cooks, melt 2 tablespoons of the butter in a large skillet over medium heat. Add the peeled, deveined shrimp and sprinkle with 2 teaspoons of the Cajun seasoning. Cook and stir 3 to 5 minutes, just until the shrimp turn pink and curl into a loose C. Pull them out and set aside.

Build the cream sauce
In the same skillet, melt the remaining 2 tablespoons butter over medium heat. Add the minced garlic and stir about 1 minute, until fragrant. Whisk in the heavy cream and bring to a boil, then reduce the heat and simmer uncovered 4 to 6 minutes, until slightly thickened.

Toss and serve
Stir in the Parmesan, the seeded and finely chopped tomato, and the last 2 teaspoons of Cajun seasoning. Return the shrimp to the pan. Drain the pasta, add it to the skillet, and toss to coat. Garnish with chopped parsley and serve hot.
