Brown the beef
Heat a large skillet over medium. Cook the ground beef until no longer pink, 6 to 8 minutes, crumbling it as it goes. Drain off the grease.
- 2
Build the filling
Stir in the ketchup, yellow mustard, crumbled cooked bacon, and Worcestershire. Bring to a boil, then drop the heat and simmer uncovered 5 to 7 minutes until it thickens up. Stir now and then so it doesn't catch.

Mix the burger sauce
While the beef simmers, stir together the mayonnaise, milk, pickle relish, and black pepper in a small bowl. That's your dipping sauce — don't skip it.

Griddle the quesadillas
Heat a griddle or clean skillet over medium. Lay down 4 tortillas, sprinkle each with cheddar, spoon on the beef, and top with the remaining tortillas. Cook 1 to 2 minutes per side until golden and the cheese melts. Cut into wedges, serve with the sauce, and pile on lettuce and tomato if you want.
