Boil the pasta
Get a large pot of salted water boiling. Cook the rotini to al dente per package directions, then drain and set aside.

Crisp the bacon
Cut the bacon into small pieces and cook in a large skillet over medium-high until crispy, about 10 minutes. Move to a paper towel to drain, then pour off all but 2 tablespoons of the grease.

Start the base
Reduce heat to medium. Melt the butter in the reserved bacon fat, add the diced onion, and cook 2-3 minutes until soft. Add the minced garlic and cook 1 minute more, then whisk in the flour and cook a couple of minutes.

Pour in the milk, whisking until smooth. Bring to a low simmer, drop the heat to medium-low, and stir in the cubed cream cheese until melted and the sauce thickens.

Whisk in the ranch seasoning, then half the shredded cheddar until smooth. Season with salt and pepper to taste.

Add the cooked pasta, diced chicken, bacon, and the remaining cheddar. Toss and simmer 2-3 minutes to heat through and finish melting. Add red pepper flakes if you want a little heat.
