Cook the Chicken
Cut chicken into 1-inch pieces. Heat 1 tablespoon peanut oil in a large nonstick skillet over medium-high heat. Add chicken and cook 3 minutes. Add mushrooms, drained and diced water chestnuts, and minced ginger. Cook 4-6 minutes more until chicken is cooked through. Drain and set aside.

In a bowl, whisk together rice vinegar, teriyaki sauce, soy sauce, garlic powder, red pepper flakes, and remaining 1½ teaspoons peanut oil. Add shredded carrots, sliced green onions, and the chicken mixture. Toss everything together to coat.

Spoon the filling into lettuce leaves. Top with toasted sliced almonds. Fold the sides of the lettuce over the filling and eat immediately.

- 1 1/2 tsp peanut oil
