Cook the noodles
Cook angel hair pasta according to package directions until al dente. Drain and set aside.

Make the sauce
In a small bowl, whisk together the cornstarch, soy sauce, rice vinegar, hoisin sauce, minced ginger, and minced garlic. Set aside.

Cook the chicken
Slice chicken breasts into thin strips. In a large skillet or wok over medium-high heat, heat 1 tablespoon canola oil. Add chicken strips and stir-fry for 5-8 minutes or until cooked through. Remove with a slotted spoon and set aside.

Add remaining tablespoon of oil to the skillet. Add broccoli florets and julienned carrots. Stir-fry for 5-6 minutes until crisp-tender.
