4ozangel hair pasta
2tspcornstarch
1/4cupreduced-sodium soy sauce
2tbsprice vinegar
2tbsphoisin sauce
1tbspfresh gingerroot
1tspgarlic
1lbboneless skinless chicken breasts
2tbspcanola oil
2cupbroccoli florets
1cupcarrots
1/4cupsalted peanuts

    Cook the noodles

    Cook angel hair pasta according to package directions until al dente. Drain and set aside.

    Make the sauce

    In a small bowl, whisk together the cornstarch, soy sauce, rice vinegar, hoisin sauce, minced ginger, and minced garlic. Set aside.

    Cook the chicken

    Slice chicken breasts into thin strips. In a large skillet or wok over medium-high heat, heat 1 tablespoon canola oil. Add chicken strips and stir-fry for 5-8 minutes or until cooked through. Remove with a slotted spoon and set aside.

    Stir-fry the vegetables

    Add remaining tablespoon of oil to the skillet. Add broccoli florets and julienned carrots. Stir-fry for 5-6 minutes until crisp-tender.

    Combine and finish

    Give the sauce a quick stir and pour over the vegetables. Bring to a boil and cook for 2 minutes, stirring constantly, until thickened. Add the cooked chicken and drained noodles; toss everything together and heat through. Serve sprinkled with crushed peanuts.
