Brown the sweet potato
Heat the olive oil in a large skillet over medium-high heat. Add the sweet potato, cubed into 1/2-inch pieces, and the onion, finely chopped. Cook and stir until lightly browned, 5-8 minutes. Add the garlic, minced, and cook 1 minute more.

Dump in the rest and simmer
Stir in the chicken (cubed, already cooked — rotisserie works great), black beans (rinsed and drained), zucchini (chopped), broth, salsa, red pepper (chopped), cumin, chili powder, salt, and pepper. Bring to a boil, then reduce the heat, cover, and simmer until the sweet potato is tender, 10-12 minutes.

Top and serve
Spoon into bowls. Add sour cream and cilantro if you're using them. That's dinner.

- 1 zucchini
- 1 cup chicken broth
- 1 cup salsa
- 1/2 red bell pepper
