Warm the filling
Shred the rotisserie chicken if it isn't already. Thaw the frozen corn. Combine the chicken, corn, and pico de gallo in a microwave-safe dish, cover, and microwave on high for 1-2 minutes, until heated through. That's your whole cook time — no stove needed.

Warm the taco shells. Slice the radishes thin and seed and thinly slice the jalapenos. Spoon the chicken mixture into the shells, then top with Monterey Jack cheese, coleslaw mix, radishes, jalapenos, and a drizzle of chipotle ranch dressing.

Notes & Tips
This is the taco I make when I don't feel like cooking but still want something that tastes like I tried. Rotisserie chicken does the heavy lifting — you're basically just warming and assembling. Don't skip the radishes, they're the crunch that makes this work instead of just being soggy chicken in a shell. If you want more kick, leave the jalapeno seeds in. If you're feeding kids, take them out.
