3tbspunsalted butter
4garlic cloves
8ozmushrooms
1tspfresh thyme
1tbspDijon mustard

    Season the steak

    Pat steaks dry with paper towels and cut into 1.5-inch cubes. Season with 1 teaspoon of the salt.

    Sear the bites

    Heat olive oil in a large cast iron skillet over high heat until shimmering. Add steak in a single layer — work in batches if needed, don't crowd the pan. Cook 4-5 minutes total, flipping every minute, until all sides are deeply browned. Transfer to a plate.

    Build the sauce base

    Reduce heat to medium-high. Add butter, mushrooms, the remaining 1/2 teaspoon salt, and thyme to the same skillet. Sauté until the mushrooms are tender and starting to brown, about 5 minutes. Add garlic and cook 1 minute more.

    Add the cream

    Reduce heat to low. Stir in the Dijon mustard, heavy cream, and parmesan cheese. Taste and adjust seasoning.

    Finish and serve

    Return the steak bites to the pan. Simmer 3-4 minutes until the sauce thickens and the steak is warmed through. Top with chopped chives. Serve over mashed potatoes, pasta, or rice.
