    Season the chicken

    Pat the thighs dry with paper towels. Mix the garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper in a small bowl, then rub it over both sides of the chicken. Dry chicken and a hot pan are the whole game here, so don't skip the paper towels.

    Sear

    Heat the olive oil in a large skillet over medium-high. Lay the thighs in and sear undisturbed 5 to 6 minutes until deeply golden, then flip and cook another 5 to 6 minutes until cooked through (165°F). Transfer to a plate.

    Start the sauce

    Drop the heat to medium. Add the butter and finely diced onion to the same pan and cook 3 to 4 minutes until soft, scraping up the browned bits stuck to the bottom. Add the minced garlic and cook 30 seconds until fragrant.

    Build and finish

    Pour in the heavy cream, chicken broth, and lemon juice. Bring to a gentle simmer and let it cook 2 to 3 minutes until it thickens enough to coat a spoon. Slide the thighs back in, spoon sauce over them, and simmer 2 minutes to reheat. Scatter with chopped parsley and serve.
