1/2tspWorcestershire sauce
1/4tspsalt
1/8tspblack pepper
14 3/4ozcanned salmon

    Mix and shape

    Finely chop the onion and crush the saltines — small pieces are what keep these from falling apart later. In a large bowl, combine the onion, beaten egg, crushed saltines, Worcestershire, salt and pepper. Drain the salmon well, pick out bones and skin, crumble it into the bowl and mix. Shape into 6 patties, pressing gently but firmly.

    Pan-fry

    Melt the butter in a large skillet over medium heat. Fry the patties 3-4 minutes per side until set and golden brown. Flip once — leave them alone until the first side is done or they'll break. Serve with lemon wedges or tartar sauce.
