Brown the pork
Heat a large skillet over medium-high. Add the ground pork and cook, breaking it up, until no pink remains, about 5 minutes. If there's a lot of fat, spoon off most of it.

Add aromatics
Push the pork to one side. Add the sesame oil, minced garlic, and grated ginger to the open space and stir for 30 seconds until fragrant, then mix into the pork.

Wilt the slaw
Dump in the coleslaw mix. Pour over the soy sauce and rice vinegar. Toss and cook 3 to 4 minutes, just until the cabbage wilts but still has some bite.

Kill the heat. Stir in most of the sliced green onions. Taste, then season with salt, pepper, and sriracha to your liking. Top with the rest of the green onions and serve.
