Slice and season
Slice each chicken breast lengthwise to make 4 thin cutlets. Mix the kosher salt, paprika, thyme, garlic powder, onion powder, and black pepper in a small bowl, then coat both sides of the chicken with the spice mix.

Sear
Heat the olive oil in a large skillet over medium-high. Add the chicken and sear 2-3 minutes per side until cooked through (165°F internal). Move it to a plate.

Build the sauce
Melt the butter (microwave works fine) and stir in the minced garlic, honey, italian seasoning, and parsley.

Sauce it and serve
Drop the heat to medium-low, pour the garlic-honey butter into the skillet, and scrape up the browned bits. Return the chicken and any juices to the pan, spoon the sauce over each piece, and let it sit a minute before serving.
