Prep the salmon
Remove the skin and cut the salmon into 1-inch cubes. Pat them dry with paper towels and season all over with salt and pepper. Mince the garlic and chop the parsley while the pan heats.

Sear the bites
Add the olive oil and 1 tablespoon of the butter to a large skillet over medium-high heat. Once the pan is HOT, add the salmon and cook undisturbed for 2 minutes. Turn the pieces with tongs and cook another 2-3 minutes until browned on all sides and just cooked through. Transfer to a plate.

Build the garlic butter
Turn the heat to medium-low. Add the remaining tablespoon of butter and let it melt. Stir in the minced garlic and cook about 1 minute until fragrant, watching so it doesn't burn. Pull the skillet off the heat.

Toss and serve
Return the salmon to the skillet along with the lemon juice and parsley. Toss gently to coat, taste for salt and pepper, and serve right away.
