Pat dry and season
Pat the scallops completely dry with paper towels — this is the most important step. Any moisture on the surface will steam instead of sear and you'll never get that golden crust. Season both sides with salt and pepper.

Sear the scallops
Heat olive oil in a large skillet (cast iron or stainless, not nonstick) over high heat until just smoking. Add scallops in a single layer, leaving space between them. Don't move them. Sear 2 minutes until a deep golden crust forms, then flip and sear the other side 1–2 minutes. Transfer to a plate.

Make the garlic butter sauce
Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and cook 30 seconds until fragrant. Pour in white wine and lemon juice, scraping up any browned bits. Simmer 1–2 minutes until slightly reduced.

Finish and serve
Return scallops to the pan and spoon the sauce over them. Scatter chopped parsley on top. Serve immediately over pasta, rice, or crusty bread to catch the sauce.
