Season the steak
Cut the sirloin into 2-inch cubes and drop them in a bowl. Season with the salt, pepper, paprika, garlic powder, and Italian seasoning, then toss to coat. Mince the garlic and slice the mushrooms while your skillet heats.

Heat 1 tablespoon vegetable oil in a large cast iron or heavy skillet over medium-high until it shimmers. Add the steak in a single layer with space between the pieces. If it doesn't sizzle on contact, the pan isn't hot enough. Sear 1 minute without moving them.

Flip the bites, add 2 tablespoons butter and half the garlic, and cook 1 to 2 minutes more until done. Don't push past that or they turn tough. Transfer the steak to a plate and keep it covered.

Add the remaining oil to the skillet over medium-high. Add the mushrooms, season with a pinch of salt and pepper, and cook 3 minutes until browned. Stir in the last 2 tablespoons butter and the rest of the garlic and cook 2 to 3 minutes more until soft.

Return the steak and any resting juices to the skillet and toss 30 seconds until hot. Pull off the heat, let it sit 5 minutes, scatter chopped parsley over the top, and serve.
