    Make the sauce

    In a small bowl, whisk cornstarch into beef broth until smooth. Stir in the soy sauce, dark soy sauce (if using), brown sugar, sambal oelek, 1½ tsp of the ginger, and red pepper flakes. Set aside.

    Sear the pork

    Slice pork chops into thin strips about ¼-inch thick, cutting across the grain. Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the pork and stir-fry 2–3 minutes until browned. Remove to a plate.

    Cook aromatics and vegetables

    Add the remaining 1 tbsp oil to the same pan. Add minced garlic and remaining 1½ tsp ginger. Stir-fry 30 seconds until fragrant. Add snow peas, carrots, and sliced mushrooms. Cook 3–4 minutes, stirring frequently, until vegetables are crisp-tender.

    Finish and serve

    Give the sauce a quick stir and pour it into the pan. Cook and stir 1–2 minutes until the sauce thickens. Return the pork to the pan and toss everything to combine. Drizzle with sesame oil. Garnish with sliced green onions and cilantro if desired. Serve immediately over steamed rice or noodles.
