    Boil the Water

    Bring a large pot of salted water to a boil over high heat.

    Prep the Broccoli

    While you wait, trim the broccoli stems and cut the florets into bite-sized pieces.

    Cook Pasta and Broccoli Together

    Add the rotini and boil on high for 4 minutes. Add the broccoli, cover, and cook for 3 more minutes at a rolling boil.

    Drain and Add Spinach

    Turn off the heat and drain. Return to the pot. Stir in the spinach and lemon zest. Let sit 2 minutes so the spinach wilts.

    Make the Garlic Lemon Butter

    In a small pan over medium heat, melt the butter. Add minced garlic and red pepper flakes and cook 1 minute until fragrant. Pull off the heat and stir in 2-3 tablespoons of fresh lemon juice.

    Finish and Serve

    Pour the garlic butter over the pasta and toss. Stir in the Parmesan. Drizzle with olive oil, season with salt and pepper. Serve hot with extra cheese and lemon wedges.
