1lbboneless pork loin chops
16ozfrozen stir-fry vegetables
1cuppineapple chunks
1/2cupwater
2tbspsoy sauce
2tbspteriyaki sauce
2tspcornstarch

    Start the rice

    Get your rice going first so it's ready when the stir-fry is. Cook 4 cups' worth of quick-cooking rice per the package directions and set it aside.

    Mix the sauce

    While the rice cooks, whisk the water, soy sauce, teriyaki sauce, and cornstarch together in a small bowl. That's your sauce. Set it by the stove.

    Sear the pork

    Slice the pork loin chops into thin strips. Heat the olive oil in a large skillet over medium-high. Add the pork and cook about 5 minutes, turning often, until it's cooked through (145F).

    Add veggies and sauce

    Dump in the frozen vegetables and pour the sauce over everything. Stir to combine, crank the heat to high, and bring it to a gentle boil.

    Steam to crisp-tender

    Once it's boiling, drop the heat to medium, cover, and cook 5 to 7 minutes until the vegetables are crisp-tender. Pull it off the heat and let it stand 5 minutes.

    Finish and serve

    Drain the pineapple chunks and gently stir them in. Serve over the rice.
