Make the sauce
In a small bowl, mix together the cornstarch, beef broth, sherry, soy sauce, brown sugar, minced garlic, and minced ginger until the cornstarch is fully dissolved. Set aside.

Sear the beef
Heat 1 teaspoon canola oil in a large nonstick skillet over medium-high heat. Add the sirloin strips and stir-fry until browned, 1–3 minutes. Remove from pan and set aside.

Cook broccoli and finish
Add the remaining 1 teaspoon oil to the pan. Stir-fry the broccoli florets until crisp-tender, 3–5 minutes. Add the green onions cut into 1-inch pieces; cook until just tender, 1–2 minutes. Give the sauce a stir, then pour it into the pan. Bring to a boil, stirring constantly until the sauce thickens, 2–3 minutes. Return the beef to the pan and heat through. Serve over rice.
