    Stir-Fry Shrimp and Vegetables

    Heat canola oil in a large skillet or wok over high heat. Add shrimp, chopped onion, and frozen peas and carrots. Stir-fry 2-3 minutes until shrimp turn pink and vegetables are heated through. Remove from skillet and set aside.

    Scramble the Eggs

    In the same skillet over medium heat, add eggs and cook, stirring, until completely set into small curds.

    Combine and Heat Through

    Add cooked rice, soy sauce, chopped green onions, sesame oil, and the shrimp mixture to the skillet. Stir everything together and heat through, 1-2 minutes. Garnish with cilantro and toasted sesame seeds.
