1/2cupsherry
2tbspcornstarch
2tspsugar
2tbspcanola oil
2garlic
1 1/2lbbeef top sirloin steak
1/2lbmushrooms
1onion
1/2lbsnow peas

    Mix the sauce

    In a small bowl, whisk together the soy sauce, sherry (or water), cornstarch and sugar. Transfer 1/4 cup of the mixture to a large bowl and stir in 1 tablespoon of the canola oil and the 2 minced garlic cloves. Add the thinly sliced sirloin and toss to coat. Let it stand 15 minutes while you prep the vegetables.

    Sear the beef

    Heat a large skillet or wok over medium-high. Add half the beef in a single layer and stir-fry 1-2 minutes, just until no longer pink. Remove to a plate and repeat with the rest. Crowding the pan steams the meat, so work in two batches.

    Cook the vegetables

    Add the remaining tablespoon of oil to the hot pan. Toss in the sliced mushrooms and onion wedges and cook, stirring, until the mushrooms are tender. Add the snow peas and cook 2-3 minutes more, until bright green and crisp-tender.

    Sauce and finish

    Stir the reserved soy mixture and pour it into the pan. Bring to a boil and cook 1-2 minutes until the sauce thickens and turns glossy. Return the beef and any juices to the pan and toss to heat through. Serve over rice.
