    Prep first

    This one moves fast once the pan is hot, so get everything ready before you start. Cut the onion, snow peas, and bell pepper into bite-size pieces and chop the broccoli small so it cooks at the same rate. Grate the ginger and mince the garlic.

    Mix the sauce

    Whisk the chicken broth, hoisin, sriracha, soy sauce, apple cider vinegar, brown sugar, cornstarch, ginger, garlic, and red pepper flakes together in a bowl. Set it by the stove.

    Brown the chicken

    Heat 1 tablespoon oil in a large skillet over medium-high. Add the ground chicken and cook, breaking it up as you go, until no longer pink and cooked through, about 6-8 minutes. Move it to a plate.

    Fire the veggies

    Add the remaining oil and the onion to the skillet. Cook 1 minute, then add the snow peas, bell pepper, broccoli, and carrots. Stir-fry 3-4 minutes until tender-crisp. Keep the heat high so they sear instead of steam.

    Bring it together

    Return the chicken to the pan and add the cashews. Give the sauce a quick re-whisk, pour it in, and toss constantly until it bubbles and thickens, under a minute. Pull it off the heat and serve right away over rice.
