Make the sauce
Add minced garlic, minced ginger, soy sauce, water, brown sugar, rice wine vinegar, and sesame oil to a small saucepan. Bring to a simmer over medium heat and cook 2–3 minutes. Whisk together cornstarch with 1 tablespoon cold water in a small bowl, then slowly whisk into the saucepan. Simmer, stirring constantly, until thickened, 1–2 minutes. Remove from heat.

Heat canola oil in a large skillet over medium-high heat. Add peeled and deveined shrimp and sauté, stirring, until pink and opaque throughout, about 2 minutes per side. Don't overcrowd — cook in batches if needed.
