Fire up the grill and prep the toppings
Get your grill going to medium heat (around 375-400°F). While it heats up, bake the onion rings according to the package directions and cook the bacon until crispy. Set both aside.

Make the patties
In a large bowl, combine the ground beef, garlic salt and pepper. Mix lightly but thoroughly — don't overwork it. Shape into six 3/4-inch-thick patties and press a small dimple in the center of each one so they don't puff up on the grill.

Grill the burgers
Throw the patties on the grate over direct medium heat. Grill 5-7 minutes per side until a thermometer reads 160°F. Don't press down on them — you'll squeeze out all the juice. Lay a slice of pepper jack on each patty during the last minute and close the lid so it melts.

Stack 'em up
Split and toast the buns on the grill for a minute. Build each burger: bun, patty with melted cheese, a good slather of barbecue sauce, a strip of bacon and a couple of onion rings on top. Add lettuce, tomato or pickles if you're feeling it.
