Mix the rub
Stir together the salt, seasoned salt, poultry seasoning, onion powder, garlic powder, chili powder, and cayenne in a small bowl. You've got two tenderloins (about a pound each) — pat them dry and sprinkle the rub all over, pressing it in so it sticks.

Fire up the grill
Get your grill going over medium heat. Lay the tenderloins on the grate and grill covered, turning them every few minutes so they color up on all sides. Cook until a thermometer reads 145°F, about 20–25 minutes.

Rest and slice
Pull them off and let them rest 5 minutes before slicing — don't skip this, it keeps all the juice in the meat instead of on your cutting board. Slice and serve.
