Butterfly the tails
Thaw 6 frozen lobster tails (8 to 10 oz each). Grab kitchen scissors and cut 3 to 4 lengthwise slits in the underside of each tail to loosen the shell. Then cut down the center of the top shell, leaving the tail fin intact, and snip the shell at an angle near the base of the fin. Loosen the meat, keep it attached at the fin, and lay it up over the shell so it sits pretty on the grate.

Make the garlic herb oil
In a small bowl, stir together the olive oil, minced chives, minced garlic, salt, and pepper. Spoon it generously all over the lobster meat, cover, and pop it in the fridge for about 20 minutes to soak up the flavor.

Hit the grill
Fire up the grill to medium heat. Lay the tails meat side up on the grill rack, close the lid, and grill for 10 to 12 minutes, until the meat is opaque and just cooked through. Serve hot with extra lemon on the side.
