Fire up the grill
Preheat your gas or charcoal grill to medium-high heat.

Make the marinade
In a small bowl, stir together the olive oil, minced garlic, finely chopped rosemary, salt, and a few cracks of black pepper.

Coat the chops
Spoon the marinade evenly over both sides of each lamb chop. You can do this right before grilling or a few hours ahead — both work great.

Grill and rest
Grill the chops for 2 to 4 minutes per side over medium-high heat, targeting an internal temp of 135°F for medium-rare. Transfer to a platter and let them rest 5 minutes before serving.

These things go fast — I'm talking 8 minutes on the grill and you're eating like royalty. The garlic and rosemary do all the work, so don't stress. Medium-rare is the move for lamb, but if you like yours a little more done, just give it another minute or two per side. Grab a cold one while you wait.
