- 1
Fire up the grill
Get your gas or charcoal grill going on low heat. Low and slow is the move here so the bacon crisps up without torching.
- 2
Wrap the dogs
Wrap one slice of bacon around each hot dog in a spiral. Secure both ends with a toothpick, pushing them in as far as you can so they don't burn.
- 3
Grill them up
Lay the dogs on the grill over low heat and cook about 8 to 10 minutes, turning every couple of minutes so the bacon cooks evenly all the way around. Pull them when the bacon is as crispy as you like it.
- 4
Make the pepper and onion topping
While the dogs cook, thinly slice the onion, cut the green bell pepper into bite-size strips, and thinly slice the jalapeno (scrape out the membrane if you want less heat). Melt the butter in a skillet over medium heat, add the veggies, and saute 6 to 8 minutes until softened. Season with salt and pepper.
- 5
Toast the buns
Spread the cut sides of the buns with a little butter or mayo and grill them cut side down for 1 to 3 minutes until you get nice grill marks.
- 6
Load them up
Tuck a bacon-wrapped dog into each bun, pile on the pepper and onion mix, and finish with ketchup, mustard, mayo, or whatever fixins you like. Grab a cold drink and dig in.
