Simmer the brats
Halve and slice the onion. Toss the brats in a Dutch oven or big pot with the beer, sliced onion, and fennel seed. Bring it to a boil, then knock the heat down, cover, and let it simmer 8-10 minutes until the brats aren't pink inside. Drain and dump the beer mixture.

Get your grill going for indirect medium heat. This par-cook trick means they're already cooked through, so all you're doing on the grate is chasing color.

Grill the brats covered over indirect medium heat for 7-8 minutes, turning now and then, until they're browned and have that nice snap. Tuck into the buns and load 'em up however you like.
