Soak the planks
Drop your cedar planks in water and let them soak for at least an hour. This is the step you don't skip — soaked planks smolder and smoke instead of catching fire on the grate.

Make the blackberry sauce
Toss the blackberries, white wine, brown sugar, honey, chipotle hot pepper sauce, 1/8 teaspoon of the salt and 1/8 teaspoon of the pepper into a food processor and blend until smooth. Strain it to ditch the seeds, then stir in the finely chopped shallots and minced garlic.

Fire up the planks
Set the soaked planks right on the grill over medium-high heat. Cover and let them go about 3 minutes until they start to smoke and crackle — that's how you know they're ready. Flip them over.

Grill the salmon
Sprinkle the 5-ounce salmon fillets with the rest of the salt and pepper. Lay them on the hot planks, cover, and grill over medium heat for 12 to 15 minutes, until the fish flakes easily with a fork. Spoon that blackberry sauce over the top and serve.
