    Mix up the patties

    Dice the bacon, finely chop the onion, and mince the garlic. Cook them together in a small skillet over medium heat until the bacon is crisp, then drain and dump into a bowl. Stir in the bread crumbs, egg, water, parsley, salt, marjoram, paprika, and pepper. Crumble the ground beef and pork over the top and mix just until it comes together — don't overwork it or the burgers get tough. Shape into eight 3/4-inch-thick patties and press a little thumbprint into the center of each so they stay flat on the grill.

    Fire up the grill

    Get your grill going at medium-hot heat. Lay the patties on the grate and cook uncovered for 4 to 5 minutes a side, until a thermometer reads 160°F. Poke the thermometer in from the side, not the top, so you're reading the middle. Resist pressing them down with the spatula — that just squeezes out all the good juice and causes flare-ups.

    Build and serve

    Toast the buns on the grill for the last minute or so. Pile each burger on a bun with mayo, lettuce, tomato, and a slice of red onion. Let them rest a couple minutes before you dig in so the juices settle.
