Simmer the hibiscus
Rinse hibiscus flowers in cold water. In a large saucepan, combine 3 cups of the water with the hibiscus flowers and lime zest. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes.

Steep and strain
Remove from heat and let stand 15 minutes. Strain the mixture, discarding the flowers and zest. Transfer the hibiscus liquid to a large pitcher or bowl.

Sweeten and chill
Add the sugar and remaining 2 cups of water, stirring until fully dissolved. Refrigerate until cold. Serve over ice with a sprig of fresh mint if you like.

Notes & Tips
This is one of those drinks that tastes way more complex than it looks — that deep cranberry red color is all from the hibiscus, and the flavor is tart and floral with just the right amount of sweetness. I use dried hibiscus flowers when I can find them (Mexican grocery stores almost always have them), but hibiscus tea bags work great too. Start with the recipe amount of sugar and taste before serving. Make a big batch — it keeps in the fridge for a week.
