Prep the apples
Dice the Honeycrisp apples and freeze them for a couple of hours ahead of time. Freezing is the whole trick here - it's what makes this thick and frosty instead of thin and watery. Short on time? Skip the freezing and toss 4-5 ice cubes in with fresh diced apples instead.

Load the blender
Add everything to a high-speed blender in this order: frozen apples, Greek yogurt, almond milk, rolled oats, maple syrup, cinnamon, and vanilla. Oats on top of the liquid helps them break down smoothly.
- 3
Blend until creamy
Blend on high for 30 to 60 seconds, until it's completely smooth with no oat bits left. If it's too thick to pour, splash in a little more almond milk and pulse again.
- 4
Pour and top
Pour into two glasses. Finish with a swirl of whipped cream and a dusting of cinnamon if you want full apple-pie-for-breakfast energy.
