Instructions
  1. 1

    Cook down the blueberry syrup

In a small saucepan, combine the sugar, 1 cup of the blueberries, and 1/2 cup of the water. Bring it to a simmer and cook until it thickens and reduces slightly, mashing the berries with a fork or potato masher as they go. You want all that deep purple juice out — this is what gives the lemonade its color and berry flavor.

  1. 2

    Add lemon and cool

Pour the warm blueberry mixture into a large pitcher. Stir in the fresh lemon juice and the remaining 1 cup of whole blueberries, then let it cool completely. Want it silky-smooth instead of speckled with berries? Blend the cooled syrup with the whole berries and strain it through a fine-mesh sieve before it goes in the pitcher.

  2. 3

Top with cold water and serve

Once the blueberry base is fully cooled, stir in the remaining 3 1/2 cups of water. Pour over ice and drink it right away, or chill until you're ready. Garnish with lemon wedges and a sprig of mint if you want it to look as good as it tastes.
