    Pick your limes

    Look for limes with thin, smooth rinds — they have less bitter pith and more juice. Avoid rough, bumpy limes. You will be that person squeezing every lime at the grocery store. Own it.

    Chop and blend

    Cut the limes into small 1-inch chunks, rind and all. Add 2 cups of ice water to a blender, then add the chopped limes. Pulse for no more than 15 seconds total — do not over-blend or the pith will make it bitter.

    Strain

    Set a fine-mesh strainer over a large measuring cup or bowl. Pour the blended mixture through and press firmly with a spatula to extract as much liquid as possible.

    Blend until frothy

    Pour the strained liquid back into the blender. Add the sweetened condensed milk (about 10 tablespoons, or a scant 2/3 cup). Blend until the drink is creamy and frothy — this is the best part.

    Serve immediately

    Pour over glasses packed with ice and serve right away. This drink must be consumed within 20–30 minutes — the pith gets bitter as it sits. Make it, drink it, done.
