Make your coffee ice cubes ahead of time
Brew your favorite coffee or cold brew and pour into an ice cube tray. Freeze until solid — a few hours or overnight works great. You want 4–6 cubes per smoothie.
- 2
Add everything to the blender
Add the coffee ice cubes, almond milk, sliced frozen banana, pitted date (chopped), almond butter, and vanilla extract to a high-speed blender.
- 3
Blend until smooth
Blend on HIGH for 1–2 minutes, scraping down the sides as needed. For a thicker texture, add another half banana or a few more ice cubes. For a thinner pour, add a splash more almond milk.

Serve immediately
Pour into a glass and drink right away. Optional: top with a little dairy-free whipped cream and shaved chocolate if you want to make it extra.
