Melt down the sugars
Pour 6 cups water into a big 6-quart pot and add the white sugar and packed dark brown sugar. Set it over high heat and stir until the sugar mostly dissolves — it doesn't need to come to a full boil yet.
- 2
Add the citrus punch
Stir in the frozen orange juice and lemonade concentrates (you only need half of a 12-ounce can of each). This is the hack that gives wassail its rich, bright citrus flavor without going sour.
- 3
Cider and spices go in
Pour in the apple cider, then add the whole cloves, allspice berries, nutmeg, ground cardamom, cinnamon sticks, and a 1-inch piece of candied ginger. Whole spices really do taste better here than ground.
- 4
Drop in the fresh fruit
Slice the apple with the skin on, and wash and cut the orange into rounds, peel on. Add both to the pot and stir. Don't skip this — the slices come out tasting like candy later.
- 5
Let it simmer
Vent the lid, bring everything to a boil over high heat, then immediately drop to medium-low and keep a gentle bubble going for about an hour. Want it bolder and spicier? Let it go 2 to 3 hours and taste as you stir.
- 6
Strain and serve warm
Scoop out the fruit and whole spices with a slotted spoon, or pour the wassail through a mesh strainer. Ladle into mugs and garnish with a few fresh cranberries, a cinnamon stick, or one of those spiced apple slices.
