Blend the rice
Pulverize the uncooked rice in a blender until it looks like a coarse flour. This is what gives horchata that milky body, so don't rush it.

Toss the ground rice with the cinnamon stick (broken into a few pieces) and the lime zest. Let it rest in an airtight container at room temperature overnight.

Put the rice mixture back in the blender and blend until the cinnamon stick pieces are fully broken down.

Add 2 cups of the water, stir, and refrigerate for 2 hours so the rice can release all that flavor into the liquid.
