Freeze the watermelon a little
Cube your watermelon (seed it first if it's not seedless) and pop the cubes in the freezer until they're partially frozen, about an hour. You want them firm and frosty but not rock solid, otherwise the blender struggles. This is the step that makes it thick and creamy instead of watery.

Add the partially frozen watermelon, vanilla ice cream, milk, sugar, and fresh mint leaves to a blender. Cover and process until completely smooth, scraping down the sides if needed. Pour into glasses and drink it cold.
