Prep the cucumbers
Peel 3 large cucumbers and chop them into rough chunks. Peeling matters here — the skin is where any bitterness hides, and taking it off keeps the whole thing clean and crisp instead of vegetal.

Blend
Add the chopped cucumbers, water, sugar, and a handful of fresh mint leaves to a blender. Blend on high until completely smooth, about 30 seconds. It'll look pale green and frothy.

Pour the mixture through a fine mesh strainer into a pitcher, pressing gently to get all the liquid out. This is what takes it from a thick puree to that light, sippable agua fresca texture — don't skip it.

Stir in the lime juice. Taste and add a little more sugar if you want it sweeter. Serve over plenty of ice with a few cucumber slices and a sprig of mint. Chill up to 3 days — just stir before pouring since it settles.
