Make the peach syrup
In a small saucepan, combine 2 cups of water with the chopped peaches and sugar. Bring to a boil, then reduce heat, cover, and simmer 5–7 minutes until the peaches are completely tender. Remove from heat and let cool fully. Strain out the peach skins and pulp — what's left is a gorgeous peachy syrup.

Build the lemonade
In a large pitcher, combine the peach syrup with the lemon juice and remaining 2 cups of water. Stir well. Add lemon slices and a few mint sprigs if you want. Serve over plenty of ice.

This one hits that perfect balance — sweet enough to feel like a treat, tart enough to actually quench your thirst. The peaches cook down fast and the syrup they leave behind is the whole point. You can make the syrup ahead and keep it in the fridge for a few days, then mix to order whenever. Early season peaches that aren't quite ripe yet?
