    Blend it up

    Add the cream of coconut, pineapple juice, lime juice, rum extract, and molasses (if using) to a blender, then drop in the frozen pineapple. Blend until completely smooth, about 1 minute. The molasses is optional but it adds a little caramel depth that makes it taste like the real deal.

    Freeze for that slushy texture

    Pour the mixture into a lidded container and freeze for 45 minutes to 1 hour, until it's partially frozen and slushy around the edges. This is the step that takes it from a smoothie to an actual frozen piña colada, so don't skip it.

    Blend again and serve

    Scrape the partially frozen mixture back into the blender and blend for a few seconds until it's smooth, thick, and creamy. Pour into glasses and serve right away, garnished with a maraschino cherry and a pineapple wedge if you're feeling fancy.
