Blend the strawberry milk
Add the milk, strawberry jam, and vanilla to a blender. Blend on high for about 20 seconds until the mixture is smooth, pale pink, and a little frothy. The texture should be thick like whole milk — that creaminess is what carries the whole drink. Set it aside while you handle the matcha.

Whisk the matcha paste
In a small bowl, sift in the matcha powder to break up any clumps. Add 4 tablespoons of hot (not boiling) water — about 175°F is the sweet spot. Whisk vigorously in a zig-zag motion with a bamboo whisk or a small kitchen whisk for 20 to 30 seconds until you have a smooth, frothy green paste with no lumps.

Loosen with cold water and honey
Pour 1 cup of cold water into the matcha paste and add the honey. Whisk again until everything is combined and a thin foam forms on top. Taste it — if you want it sweeter, stir in a little more honey now.

Layer and serve
Fill two tall glasses with ice. Pour the strawberry milk evenly between both glasses, filling each about halfway. Slowly pour the matcha over the back of a spoon onto the strawberry milk so the green layer sits on top of the pink without mixing. Drop in a straw, give it a stir right before drinking, and that's it.
