Blend it all up
Peel and cube the mango, removing the skin and any fibrous, stringy bits. Add the yogurt, cubed mango, ice, sugar, mint leaves, and crushed cardamom pods (if using) to a blender. Cover and blend on high for 30 to 60 seconds, until completely smooth. If the mango is still fibrous after blending, press the lassi through a fine-mesh sieve.

Pour and serve
Pour into two chilled glasses and serve immediately. It is silkiest right out of the blender.

Notes & Tips
This one's a 10. Thick, creamy, and tangy, with ripe mango doing all the sweetening. The whole drink lives or dies on your mango, so grab the softest, best-smelling one you can find. The cardamom is technically optional, but I'd push you to use it. It adds a warm, floral note that makes this taste like the real deal instead of just a fruit-and-yogurt blend. Drinks like dessert, but it's basically fruit and yogurt.
