Prep the beets
Peel and chop the beets into rough chunks. Wear gloves if you'd rather not have pink hands for the rest of the day — beet juice stains everything it touches.

Blend it down
Add the chopped beets, apple juice, and grated ginger to a blender. Pulse until completely smooth. The apple juice does two things here: it gives the blender enough liquid to work with, and it takes the earthy edge off the beets so the whole thing tastes bright instead of like dirt.

Strain
Line a colander with a couple layers of cheesecloth and set it over a big bowl. Pour the blended mixture through, then gather up the cheesecloth and squeeze to get every last drop. Discard the pulp (or save it for baking). Stir the fresh lemon juice into the strained juice.

Serve fresh
Pour over ice and garnish with a lemon or orange wedge. Drink it the day you make it — fresh juice is best within a day or two.

- 2 tbsp lemon juice
