8cupapple cider
1/2cupbrown sugar

Load up the pot
In a large saucepan, combine the apple cider, brown sugar, cinnamon sticks, allspice, salt and nutmeg. Give it a stir so the sugar starts to dissolve.

Bring it to a boil
Bring the mixture to a boil over medium-high heat, then reduce the heat to low.

Simmer and steep
Cover and simmer for 20 minutes so the cinnamon and spices really open up. Your whole kitchen is going to smell like fall.

Strain and serve
Fish out and discard the cinnamon sticks. Ladle the hot cider into mugs and drop in a fresh cinnamon stick as a stirrer if you want.

Notes & Tips
This is the drink that makes the whole house smell like a fall afternoon. Use real apple cider (the cloudy refrigerated kind) if you can find it — it's tangier and way better than clear juice, but juice works in a pinch. Taste before serving; if your cider is already sweet, dial the brown sugar back a little. It keeps in the fridge for a few days and reheats perfectly, so make the whole batch.
