Load the blender
Add everything to the blender at once: the frozen cubed sweet potato, 1 cup plant-based milk, the yogurt, maple syrup, almond butter, hemp seeds, pumpkin pie spice, and salt. The frozen sweet potato is what makes this cold and thick, so don't skip the freezing step if you're prepping your own.

Blend until smooth
Blend on high until completely smooth and creamy, about 60 seconds. If your blender is struggling or you want a thinner, more drinkable texture, stream in a little more milk a splash at a time until it moves easily. A strong blender really helps here since frozen sweet potato is dense.

Taste and sweeten
Give it a taste. Want it closer to actual pie? Add another tablespoon of maple syrup. The pinch of salt is doing quiet work too, so don't leave it out, it makes the whole thing taste sweeter.
- 4
Pour and serve
Pour into two glasses and drink it right away while it's thick and frosty. A little extra pumpkin pie spice dusted on top is never a bad idea.
